Abstract:
Sesame seed is one of the main nutrient substances which are used in the food industries. There
are many toxins that affect the sesame seeds but the most known was the aflatoxin. Aflatoxin is
one of mycotoxins that appeared on the food products because of fungs as: Aspergillus. There are 6
main types of aflatoxin whcich are B1, B2, G1, G2, M1 and M2. The aim of this study is to detect
aflatoxins B, B2, G1 and G2 in 42 samples of tahini by using HPLC. The method used for
aflatoxin extraction was developed by AOAC standard test methods. It stands for Association of
Official Analytical Chemists, Contaminant Branch (CB). The method is linear from the limit of
quantification 0.5 g/kg up to 40 g/kg. This method is intended for aflatoxin analyses in tahini
simply with minimum toxin lose, excellent recovery, and accurate results with the limit of
detection 0.1 g/kg. The results of 42 samples showed that the average of AFB1 contamination in
the brand samples was 0.10 μg/kg while the average of AFB2 was not detected. However, in the
local samples the average of AFB1 contamination was 7.79 μg/kg while the average of AFB2 was
1.43 μg/kg

المنتجات الغذائية بسبب الفطريات على النحو التالي: هناك 6 أنواع رئيسية من األفالتوكسين هيB1 ، B2 ، G1 ، G2
،M1 ، M2 الهدف من هذه الدراسة هو الكشف عن األفالتوكسينات B و B2 و G1 و G2 في 24 عينة من الطحينة
باستخدام جهاز الفصل الكروماتوجرافى عالى الكفاءة وتم تطوير الطريقة المستخدمة الستخراج األفالتوكسين من قبل
AOAC رابطة الكيميائيين التحليلية الرسمية ، فرع الملوثات .(CB (وتكون الطريقة خطية من حدود القياس الكمي 0.5
ميكروغرام / كغ حتى 25 ميكروغرام / كغ. تهدف هذه الطريقة إلى تحاليل األفالتوكسين في الطحينة ببساطة مع فقدان
الحد األدنى من السموم ، واالسترجاع الممتاز ، والنتائج الدقيقة مع الحد من الكشف 1.5 ميكروغرام / كغ. اظهرت نتائج
ال24 عينة ان متوسط االفالتوكسين B1 فى عينات العالمات التجرية كان 15.5 ميكروغرام / كغ, بينما لم يتم الكشف
عن متوسط االفالتوكسين B2 . اما فى العينات المحلية كان متوسط االفالتوكسين B1 7 ...ميكروغرام / كغ, بينما كان
متوسط االفالتوكسين B2 21.1 ميكروغرام / كغ.
